Chicken Enchiladas

Ingredients

  • Two large chicken breasts (no skin or bones)
  • Six large flour tortilla shells
  • Two 12 oz cans of red enchilada sauce
  • One 12 oz can diced green chilies
  • One medium onion
  • One large tomato
  • One 24 oz bag of finely shredded cheese
  • Three ripe avocados
  • Bunch of green onions

Directions

  • Preheat oven to 400 degrees
  • Place chicken breast in pot, cover with water and let boil until chicken is cooked through (Temperature should be 165 degrees Fahrenheit)
  • Once chicken is cooked through pat dry with paper towel and set aside to cool
  • Once cooled shred the chicken in semi-fine strips
  • Season shredded chicken with salt, pepper, Italian seasoning, basil.
  • Add green chilis and half a can of enchilada sauce (add more as needed) until mixture is throughly mixed and moist
  • Add second half of enchilada sauce to the bottom of a 9x by 13x baking dish
  • Lay tortilla flat and spoon generous amount of chicken mixture, top with cheese and fold. Continue until no more chicken mixture remains
  • Cover enchiladas with remaining sauce, top with cheese and cover with tinfoil. Place in oven, cook for 20 minutes
  • While enchiladas cook, cut three avocados in half and remove the pits
  • Slice avocado and scoop out the insides, place in bowl, add salt, lime, and white onion
  • Mix/mash until guacamole is throughly mixed (leaving some chunks for texture)
  • After 20 min remove tinfoil from enchiladas, top with more cheese and broil for 5 min
  • Let cool for 10 min, top with green onions and enjoy!
