Creamy Red Skin Mashed Potatoes

Ingredients

  • 3 lbs red skin potatoes
  • 1/2 cup sour cream
  • 3 Tablespoon softened butter
  • 1 Tablespoon chives
  • 3/4 cup chopped green onions
  • 3/4 cup hot milk
  • 1 tablespoon minced garlic
  • Garlic herb salt to taste
  • 3 Teaspoons pepper

Directions

  • Wash potatoes until clean
  • Add to pot and cover with water
  • Boil potatoes until tender when pierced with a fork
  • Once done cooking, mash potatoes slightly( to avoid gummy potatoes) leaving a few small chunks for texture, set aside
  • Brown 1 tablespoon garlic for 3 minutes
  • Add milk and heat until hot, careful to not overheat or your milk will separate. Make sure to stir to combine
  • Add milk mixture and butter to potatoes and mix
  • Once fully mixed add half your sour cream, mix. Add other half and mix
  • Add chives, green onions, pepper, and herb salt. Mix until throughly combined
  • Top with any remaining green onions and serve!
