Ingredients

  • 8 slices rye bread
  • 1 cup sauerkraut (drained)
  • 8 slices corned beef
  • 1 bottle thousand island dressing
  • 3 tablespoons Butter softened
  • 8 slices swiss cheese
  • 1 Jar pickles (preferably dill pickles but any kind works!)

Directions

  • Take two slices rye bread, butter both sides of each bread slice
  • Spread thousand island dressing on one side of each slice
  • Layer corned beef, sauerkraut and pickles on one slice
  • Combine sandwich and butter both sides of the sandwich, repeat until you have four sandwiches
  • Fry both sides of sandwiches until golden brown
  • Serve with a baked potato or a green garden salad and enjoy!
