Ingredients

  • 1 LB farm-raised salmon without skin
  • Two ripe avocados
  • One cucumber
  • Two cups rice
  • Pack of seaweed sheets
  • 2 Tablespoon Rice vinegar
  • 1 Tablespoon Sea Salt
  • 1 Tablespoon Sugar

Directions

  • Cut cucumber in half short-wise, then slice each half long-ways until each is about an inch thick, remove seeds
  • Slice avocados into slices
  • Wash two cups rice until water runs clear
  • Add rice back into rice cooker and fill with two cups of water, cook until rice is finished
  • After rice is finished cooking add two tablespoons rice vinegar, one tablespoon sea salt, and one tablespoon sugar
  • Fold into rice, until fully mixed
  • Spilt seaweed sheet in half, place one half rough side up on bamboo roller
  • Spread a generous layer of rice on surface of seaweed and flip
  • Place your salmon, avocado, and cucumber on now exposed seaweed
  • Fold seaweed sheet until one end touches the other
  • Pull bamboo roller away from you, rolling the sushi as you go
